I cut off a bit and sliced into 4 thick chops, put the rest in the freezer for future adventures.
Fired up the tube with pecan chips. This was sort of an experiment to see if they'd work as well as pellets in my tube.
Seemed to light ok.
And seemed to smoke ok. I cold smoked them for a little over an hour, then fired half a chimney of K'ford comp.
Wasn't too worried about ambient temps.
Cold smoked, then hot smoked for about 40 mins til the temp started struggling then put them over the coals.
All in all a little over 2 hours for a very tasty meal. Went a little too heavy on the rub, but I think we'll survive.
