OK I have a cheap buffalo grinder with the big red wheel. First time using making breakfast sausage. Have done first grind . Mixed in spices. Wanting to do second grind and stuff in casings. Do I leave the cutter and plate on ?? Thanks a bunch

Do your second grind first. For stuffing you'll need a plate to keep the auger centered, but don't use a blade. You should have a kidney or stuffing plate with large, kidney shaped holes in it that allow the material to flow without much restriction.

Keep everything very cold for safety and to keep the fat from smearing.

Time?  If doing this immediately, you should be ok.

 

It if it going to sit for any amount of time, I would wash it all out.

Ya, thanks a bunch fellas. Left the plate in. Everything worked fine. Grinder only came with the one plate. Bout as cheap as they come. Looks like cheap cast steel.bought it with the in tensions of putting a motor on it but can't find one. So I'm gonna kick it to the curb, or should I say craigslist. But I sure appreciate the response.
