How long can I wait?

I have a question for you seasoned smokers.  I have some venison strips that's been marinading for 24hrs.  I was going to put it in the smoker today after I got home from work.  We are having a wind/rain storm and our power has been going off and on all day.


My question is, how long can I wait to smoke it.  Weather should be better tomorrow.  Will the meat be OK until then?

Hey Don,

I'm not a veteran but those who are will prolly ask what you soaked the meat in? Salt brine? Buttermilk with flavor stuff?  If you can reply with your recipie you'll t more accurate help.


I've had an occasion when I spiced and cured beef jerky strips and had to keep in fridged an extra day.  No adverse effect from that.

The marinade is........


  • 4 tbsp. soy sauce
  • 4 tbsp. Worcestershire sauce
  • 2 tbsp. brown sugar
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ tsp. My rub
  • freshly ground salt and pepper


It's really good, this is the second batch.

You'll be fine. May just be a bit stronger flavored due to sitting in the marinade.

Any chance you could smoke in a gas BBQ??
