I read up a lot, and did the 3-2-1 method as close to vanilla (no tweaks) as I could.
I use the Brinkmann Electric, and it stayed right where I wanted for temperatures for the majority of the smoke. I didn't use apple juice, just the natural juices came out when foiled. I was really impressed.
The one thing I was pissed about, is I applied way too much rub. I had to buy pre-rubbed pork ribs from Costco, because the standard ribs packages were too large, and expensive, for a first time test.
I truly wanted them a little more 'fall off the bone' tender, but they were still really cooked, and tender enough to enjoy.
Next time, less rub, more time in foil, lower heat maybe, in the '3' cycle. I had it around 235° for the beginning cycle, maybe it cooked too fast or dried up a bit too much.
