Fatties were turkey Italian sausage, beef, sauteed onions and peppers with provolone. Wrapped in turkey bacon. Yea, I know, but gotta do the cholesterol check next month.
Smoked about 2.5 hours at 250 in my Smoke Hollow 38 with mesquite. Crisped up the bacon under the broiler for a couple of minutes.
Came out yummy, thanks to all the info in the stickies and the rest of the forum.
