Hey Guys,

I've been smoking meats since 2009 when I bought my first COS from Home Depot.  I immediately smoked 2 chickens in it and have been hooked ever since...

There had been a pause in my smoking until recently.  Before I moved to BG back in 2012, I was able to keep my COS indoors and it stayed decent in shape.  Where I live now the only place I can keep it is outside and you know what happens to those COS units when you have to store them outside...So 3 weeks ago I bought the MasterBuilt 2 door propane smoker, and I've used it every weekend since.

I've already read on here what all the popular mods to that that unit are, and some I have done, others not.  I had always cooked hot and fast on my COS, but with this unit it is much easier to cook low and slow, and for the first time I have smoked meats without using the Texas Crutch.  Every method has it uses, but I am really digging not having to foil  because I can better control the temperature with my new smoker.

Anyway, just thought I would say hello and I look forward to reading and learning much more as I get back in to my habit.

Welcome to the forum from South Jersey. I have found that this is a one stop shop for everything BBQ, smoking, and low and slow. Don't be afraid to ask questions. People on here are always ready to lend a hand, plus you will get twenty different way to do something and everyone will think they are right.

Can't wait to learn more about this art reading this forum. The best part about smoking meats is that you get to eat them after!!!

I'm currently considering entering a Backyard BBQ comp near me. I think I'm going to just to get my feet wet, no matter the results. We'll see what happens

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
