Hey everyone! I'm fairly new to smoking. I've had some experience in the past doing some different meats in the past, but bought my first "starter" smoker in april. It's a Brinkman off-set smoker. I live just outside Austin, TX and love all things BBQ. I naturally lean toward believing that Texas BBQ is true BBQ, but I've had too good of BBQ other places to honestly say that. I look forward to reading and talking to everyone and learning along the way.

I will be smoking a brisket tomorrow for July 4. I have done a couple brisket in the psst, b u t this will he my first on this smoker, so I am a little nervous about how it will turn out.
 
Welcome JB! Feel free to post any questions as you do your smoke today. I've seen a lot of real-time virtual cooking happen on here, so I'm sure you can get any help you need if you want it.
