Think this will work? water/drip pan in pellet fridge?

Ok. So I built a double door SS pellet fridge. Love it to death. I want to start cooking some whole hogs in there. The inside chamber is 3' wide x 2' deep x 6' tall. I have a 1" granite slab on the bottom as a heat sink and the pellet auger comes in 2" above the granite from the left. I am thinking about making a RF basically. A 4" tall x 30" long x 24" deep tray on legs 1/2" taller on the open end. It will be about 6" above the burn pot. The reason for this is to catch the hog drippings and also to add flavor and moisture to the cooker. My stack exits the smoker in the top center rear of the smoker.

Anyone see why this wouldnt work?

Hello.  I am certainly no expert but thinking this over I can see a possible problem.  On reverse flow the stack is on the same end as the firebox.  This forces the heat to travel from the opening in the reverse flow plate all the way across the smoker to exit.  In your idea I can envision one hot side and one cold side to your smoker as the heat MAY travel to the opening and then up the side and out the stack.  I think it might also negate the heat sink effect by moving the heat quicker to one side and out the stack.  Just my opinion.  Others may have different advice.  Good luck.  Keep Smokin!

Yeah. I thought that too. Wasnt sure if it would pull the heat up the middle since the stack exits in the top center of the chamber. And having the water pan 4" above the burn pot, I think it would start to boil the water and put off heat. Might take a bit longer but should in theory.

I guess I will try it. It will have legs and be removable. Put it this way...it wouldnt be my worst idea in regards to building a cooker. :)
