I've never wanted to be part of a forum before but this seems like such a supportive community and has so many amazing posts that I really want to be here. I just bought a Char-broil 430 offset smoker (haven't smoked before, usually use propane BBQ) and it's been too cold in southern ontario to season it yet but I can't wait to start this adventure.

I know I have already learned a lot from this site, hopefully in time I can give something back as well.

Welcome to the forum.  Youll find that how windy it is is generally more limoting than how cold it is.  I hope you have as good a time learning as the rest of us did.  There aren't a lot of things you can set out to learn where you can still eat the "mistakes".
