Thanks for letting me join . I live at a place called The gardens in NE Tasmania  Australia . I love to hunt and fish and I also love cooking my catch . Have started smoking game and fish the last couple of years and making my own sausages and salami mostly with wallaby . Hoping to learn new tips and tricks with you guys   THANKS

 How is wallaby meat ? Is it lean like venison or is there fat like beef?

Yes wallaby meat is much like venison . The ones we get which are taken in areas  where there is good grazing land are often well conditioned with  some fat . The ones which are taken in bush scrubby areas are not so good .They are good in burgers sausages ect just like venison
