For Baby Backs you should use the 221 but remember it is only a guideline.  After 2 hrs. I add apple juice into the wrapped ribs to add moisture.  Check the ribs for doneness using a toothpick to feel how tough the meet is.  Some will pick the ribs up with tongues and do the "Bend Test".  Pick them up on one end holding the ribs about 3-4 bones in.  The ribs should bend at about a 45 degree angle.  It depends on how you prefer your ribs.   On the tough side or more mushy.
