Hello Guys

I would like some help from the Pro's smoking in the USA....

I am this weekend going to build myself a Beer Keg smoker from some stainless steel 9 gallon keg.

Ok the instructions im taking from http://www.instructables.com/id/Beer-Keg-Smoker/ but as i cant weld im not doing the final step.

If anyone has any tips please tell me...


but the help and advice i need is how much charcoal do i need for a 2 hours burn? also do i need a water chamber between the coals and the meat (metal tray) to stop the meat from burnign on the under side?

any advice is welcome.
