Great butt. I am in the same boat as you. I too have the one that must be obeyed and she loves pulled pork for anything from sammies to tacos or enchiladas. We also mix some in with cowboy caviar and roll in to a egg roll to deep fry. Anyway....I always foil and pull to rest at about 195 and set in a cooler with a towel for a couple hours. This seems to help keep the mushies away and a  light bark which is just how she likes it. Happy wife happy life :yahoo:
