My name is Rick, I live south of Dallas on a small reindeer ranch.  Most of our cooking is on a Big Green Egg and traditional wood smoker.  We have an 1880's period correct chuck wagon we use on the ranch.  Several times a year we haul it to different ranch events in New Mexico and Kansas.  The chuck wagon cooking is done over open mesquite fires with dutch ovens.  I'm a retired Texas State Trooper and my wife Roberta is a retired Lt Col in the USAF.

Sounds like an Aggie thing to say. I'm from FW. Currently in Afghanistan. I'm jealous of your reindeer ranch and your chuck wagon!

First and foremost let me thank both of you for your service. We always laughed about the DPS. The only state that could consistently write you a ticket and by the time they were finished you'd want to go get a beer with 'em....LOL Never met one that I wouldn't have been proud to call a friend (yes I have met a few.....LOL) West Texas should have no speed limit! ROFLMAO! Chuck Wagon, you do Roswell/Ruidosa?

 

Anyway, welcome to the boards. Its a great place to learn, smooth off some edges, or just enjoy sharing because if we can't smoke were like talking about it almost as much.

 

The search engine is cram-packed full of goodies you'd never expect to find.

Wait a min, chuckwagon, that's campfire cooking......... Looking forward to seeing some good tips on chicken fried! Nothing finer than Steak fingers or a good chicken fried steak with milk gravy and hot biscuit. Oh yeah...... I just gained 5 lbs. thinking about it!

 

Ok guys roll another log over here for him and his bride to sit on next to the fire.
