Huli Huli Spatchy (With the Grand Finale Q-VIEW)!!!

Been craving Huli Huli so here we go.

This is the base recipe a friend in Hawaii gave me. I typically don't measure much and make approx. a double batch. I reserve a cup or so for basting during the cook. This one of the only times I ever baste while smoking.


3/4 cup, shoyu (soy sauce)
3-4 fresh squeezed limes
1/2 cup, honey
1/3 cup, brown sugar
3-6 garlic cloves - minced
3 tablespoons ketchup
1 tablespoon mustard
2 tablespoons, minced fresh ginger
1 teaspoon Sambal oelek (Asian Chile paste) or 3-6 Hawaiian Chiles
Hawaiian Sea salt to taste ( I omit as I feel the Shoyu has enough salt)
Good amount of pepper

Hmmmmm, sounds like I might need to try it.

 

Maybe leave the chilies out thou.

You certainly can leave out the chiles but you should add a bit of heat to off set the sugar, even if it's just a little. Otherwise you'll really only have Teriyaki!

Thanks Disco! To add a bit more flare to this dish, I like to add some coconut milk, lemongrass and even fish sauce. But then it's more Thai, or Vietnamese than Hawaiian!

Totally forgot, the chicken needs to marinate for a minimum of 3-4 hours, and as much as 24 hours. Basting is a must for this dish.

Things got in the way of my smoke last night so the Huli Huli chicken is getting a full 24 hour soak until I get off work this afternoon!

Ran the Mini at 325°-350°. Had larger than normal temp swings because I kept opening the unit to baste every 15-20 minutes.

The Grand Finale! Next time I do Huli Huli I am going to inject the marinade into the bird for a more intense flavor.

Thanks Clarissa! It was really yummy! We'll be using the leftovers tonight on a large garden salad!

Thanks WIllie! I'd recommend injecting the bird and marinating over night. I really like the intense flavors!

That's a bad word around my house! You'll never guess who suggested salad for dinner tonight. I really wanted tri tip... I better read up on that thread Mr T did on smoked lettuce. Judging by the size of the box in the fridge its on the menu for a while!
