I have it in my head that I am going to try to smoke the turkey heavy for 1 hour, then put it in The big easy infrared till its finished.

The bird weighs 10.5 lbs.

Does anyone have any advice?

I haven't tried this before, and searches haven't pulled up much of anything from here, and I trust the opinions from the people here more so than other places.

I have smoked turkey for a couple / three hours and then dropped into an oil fryer. Some of the best I ever had. Good luck and don't get too crazy with the smoke.
 
Well, it did work out great, and that oil less fryer was great way to finish the skin. smoked it till it was 165 (a little late I know) and then did 20 min in the fryer. The meat texture was fantastic as was the flavor. smoked in half alder/cherry, little apple in the end.

brined for 12 hours. seasoned inside and out, but without butter or oil.

Highly recommend it, cant wait to try playing with the recipes.
