I was looking for dimentions on whole hogs last night and I stumbled upon this website. Not only was this place able to answer my question after some serious searching, but the community seemed attentive, yet most importantly knowledgeable. I have been meaning to sign up for a BBQ forum, but never felt compelled until now. So here is a little about me...
I am a 28 year old that started his own BBQ food cart in Denver April of '13 I have only been smoking meats for about two years, but I loved it so much I had to start selling it because my production was unsustainable at my consumption level, (I made way more than I could eat) That is what spurred the creation of Bubba Duke's BBQ, that and a combination of:
1. A demand for mobile food in Denver as the brewery scene grows and they rely on food carts/trucks to supply food.
2. BBQ and craft beer were made for each other, with so many complex flavors overlapping in a casual yet credible environment.
3. There is no descent BBQ in Denver, not in my mind anyways, and if there were it isn't enough to satisfy the demand Denver has for it.
Every BBQ place in Denver is just copying what Kansas does, and I wanted to bring some twists to the game, I am heavily inspired by Carolina style BBQ and try to make that apparent in my food.
I am currently smoking on 2 Masterbuilt XL propane smokers, but I recently upgraded to an older Traeger trailer I got for a song. Comperable to the COM190 but I am unsure its model number since it is an older build. Here are some photos if anyone knows the model number feel free to let me know.
I haven't cooked on it yet but I am looking forward to doing that this week.
