Cut back on the coals used but, still, this thing runs HOT so must be watched. Gave the TT and overnight rub and 'hooked' it over offset coals using a Weber coal basket. I could cut back even more I believe to lower the heat level (maybe). Regardless, I pulled this off at 140 IT and let it rest before slicing on the bias. It had a beautiful bark and was absolutely moist, tender & delicious.....one of my best ever I believe.
