I'm thinking about building a double-barrel smoker. I hope I'm putting this in the right category, although it's not a UDS really, but it is barrels. SO, I've noticed that on most of the double barrel smokers, the flow vent that connects the lower firebox to the upper cook chamber is usually placed more to one end of the barrels. It seems that this might cause more fluctuation in heat from each side of the cook chamber.
My idea is to put the vent in the center, and then place a bevel plate below the cooking racks, forcing the smoke to heat the bevel and travel to each side of the bevel plate into the rack area. The bevel plate would have a gap at each end for this. It's similar in the flow to a reverse flow in that aspect, but in this the smoke would come up each side of the bevel. Then, on the back of the upper barrel, in the center, have my exhaust.... so that it's not directly over my meat (condensation dripping down!!)
Any thoughts or faults with this concept?
