Did another 9+ pounds of Salmon turning it into 291 pcs of yummy Nuggets. Did my traditional Brown Sugar / Salt (4/1 ratio) with fresh garlic brine for 5 hours.

Drying time

The Big Chief brothers working overtime. Used alder and apple chips. Smoked for 2.5 hours.

Cool down boys!

Yeah, think I've posted a couple Nugget sessions recently.

And the wife came home yesterday with two more monster Salmon that we need to process today.- argh!
