I've lived in the northeast all my life and have never found TriTip in the grocery store. This week, that changed! The price nearly made my choke, but I had to buy it.
The meat was very lean. All I did for seasoning was a simple salt & pepper.
Went on the smoker at 225. I used post oak and cherry for the smoke, which is my favorite combo for beef.
Pulled it with then IT got to 115 degrees. Then It went on high heat to get a reverse sear. The sear was about 2 1/2 minutes per site. There were no flare-ups with it being so lean.
I couldn't believe how flavorful this was! Now I definitely see what all the fuss is about. I was careful to slice this against the grain.
One more money shot.
I really hope the store will continue to carry this cut. (but at a cheaper price!) Thanks for looking!!
