Ok guys and gals, really new here. Just got my UDS built. I know, no pics didn't happen. But it is, I have it all seasoned up and did a short smoke of some fatties. I am new to UDS and need to know if my pork butt is going to cook faster than it did in my smokenator. I have 32 pounds of butt that I need done by noon on Saturday. I am thinking a 7 pm start on Friday? My 32 pounds I in 5 butts, two of them are only 5 pounders. The other 3 are 8 pounders. Any advice specific to a uds smoke would be greatly appreciated! I will get some pics of this one for sure!

Hello trhyfz450.  You should be fine.  225-250 will be the same no matter what smoker you use.  The only thing might be the initial temp drop when you add that amount of meat at once.  Once recovered you should be ok.  If you have done that amount before you already knew that.

Good luck.  Let us know how it turns out.  Keep Smokin!

The rule of thumb is 1 1/2 hours per pound BUT DON"T go by that! Always go by internal temps!!!!  Prep that butt however you want , then put her on the smoker till about 165 & then foil. Finish going to 190-195 if your slicing, 205 if your pulling......
