Dirt's Grilled Jalapeno, Lime, Cilantro Breasts

Inspired by Red's Cilantro Lime Chicken I whipped up a similar marinade for some chicken breasts we had.

 

3 limes (juiced)

2 Jalapeno's chopped

1/4 onion

3 cloves garlic chopped

large handful of fresh cilantro chopped

tablespoon EVOO

salt

pepper

 

Blend in food processor. Pour over chicken in ziplock bag and marinate in fridge for several hours.

 

We grilled these on the gas bbq. Grilled some corn and my sweetie whipped up an awesome batch of potato salad. Been to busy the last couple days to get the mini-wsm up and running and still eat at a decent hour!

 

 

Fresh Cilantro Smells awesome all chopped up!

 

 

 

Corns done!

 

 

Chickens Done!

 

 

Yumm!

 

 

 

My Sweetie wanted hers burger style.

 

 

I wanted mine plated!

Now, that looks mighty tasty and I have everything to throw that together and some breasts/thighs left to do something with. I see a plan formulating here Thanks for posting some inspiration.....enjoy......Willie

Thanks Willie!!! I think the only thing I'd do different is add more jalapeños, wasn't as hot as we like, but was still tasty!

looks good but I'd have to leave out the cilantro or coriander as we know it over here, the taste reminds me of the time my Ma washed my mouth out with soap for cussing !

I suppose you could substitute fresh parsley.

Taking the rest of the weekend off from smoker building. Floating bathe river today. Tomorrow and Sunday I am dedicating my time to my other hobby, boat building. Gonna start one of two skin on frame stand up paddle boards! I do plan on smoking a tri tip for dinner tomorrow!

Thanks Stan! It was really good! I think it would fun to flatten out a breast marinate it in this then make a cuban style sandwich out of it with ham and cheeses!
