Sweet Italian Sausage

When I make the brats type sausage in my grinder the ground up pork does not look as if it is ground up as fine as the store bought.  Are they putting theirs in a blender or something to make it the consistency of a hot dog.  It seems like mine is a lot coarser.  What blade do you use.

Grind through a 1/8 or 4mm plate. keep the meat semi frozen if you dont have a commercial grade grinder You can do a double grind if you want it finer.... Make sure you dont smear......
