I found this forum by originally looking for Boston Butt Rub ideas all over the web. I posted my DIY Rub in the recipes section just a little while ago, I hope that you will like it. As for all my grilling and smoking I use a Charmglow 5 burner gas grill with a ceramic sear burner (sear burner makes the best steaks), Weber Silver 22.5" kettle, and a UDS Smoker that I built.

I just used the UDS to smoke (hickory) some skinless/boneless chicken breasts that I smeared with pesto. What we do is slice the chicken and make pressed panini sandwiches using french bread. I load mine up with Mayo on one side, Italian dressing on the other,  tomato, onion, green pepper, cucumber slices, swiss cheese, with a sprinkiling of italian seasoning. I then use the large Lodge ribbed griddle on the gas grill and a heavy iron griddle or pan for the weight to put a nice ribbed crispy crust on both sides. I'm also a huge Cast Iron fan.
