Pit Beef Barley Soup

Pit Beef Barley Soup (Stewp)

Years ago, before I was married, lets say about twenty years ago.
I stopped in a Dunkin' Donuts with my girlfriend and noticed they had a Beef Barley Soup, I said, "that looks pretty good", and eagerly purchased a bowl, man was that good soup.
 
After my first bowl I was hooked, so every now and then, my girlfriend and I, currently the wife (Boss), would stop in our local Dunkin' Donuts and I would always look for the Beef Barley soup and they were always out. This actually became an inside joke between the two of us. 
I eventually gave up looking for the soup and I think they eventually stopped selling it. Anyhow I would often say to my wife, "remember that beef barley soup at Dunkin' Donuts", she would always say, "Yeah the Soup they never had"!
 
I always wanted to make some myself, well the time has finally come.
 
After making my Jack Daniels Pit Beef, I figured that some of the meat should be used to make some Hearty Beef Barley Soup (Stewp)
 
Here is the Pit Beef that was thick sliced for dinner, whatever that was not eaten for dinner was chopped into small pieces for the soup, fat and everything.
There was a heel piece with a ton of awesome bark that was chopped fine as well.

All the ingredients were added at once, no sauteing or browning... everything into the pot, after a few hours on the stove dehydrated carrots were added.
I finally got a chance to use some of the carrots I had dehydrated.
The soup sat in the fridge the next day. Stew was removed from the refrigerator and some was served over top of mashed potatoes and was awesome as is, but I still needed to add the barley.

My better half stopped on the way home to pick up the barley, then proceeded to cook it on the stove as the stew warmed up.
Cook time for the barley was supposed to be an hour, I started spooning the barley into the soup after 45 minutes, then left the soup on low for another hour or so.

Sorry, the ingredients aren't exact I was just winging it.
 
  • 2 tablespoon Mc Cormick Beef base 
  • 5 bay leaves
  • 6 garlic clove 
  • 2-3 pounds beef chopped fine
  • 4 celery stalks
  • One chopped onion 
  • 1 cup carrots
  • 1/4 cup vermouth
  • 1 can au jus
  • 1 can beef gravy
  • 3 cups of beef gravy
  • 1 cup chicken broth
  • 1 tablespoon 
    Worcestershire
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1 tablespoon garlic and
  • 1 Tablespoon Onion Powder
  • 1-1/2 cups cooked barley
  • 4 Tablespoons butter
  • 1 teaspoon basil
  • 1 teaspoon parsley
  • Corn Starch to thicken

Looks really yummers....especially for a cold night.  Wish I could eat Barley....allergic!  th_crybaby2.gif

I love beef barley soup!  The last time I made some, I used a slow cooker(which was way good.)  I'm sure this would be much better.

Done this on the stove top, I think that the slow cooker would be better.

I'd be all over that SQWIB !!!!

 

That stuff heats up real good on top of my Woodstove, during our occasional 6 day power outages from big Snow Storms!!! pot.gif

SQWIB, great minds think alike.  I did beef barley soup this week with my leftover smoked pot roast.  It was good stuff.  That barley really likes to absorb water.  I had to stretch the broth a little to compensate.

We love some soup around here. I make beef a barley about once a month...... Great job SQWIB!!!!

Kat is the reason gluten allergy?

Try lentils, quinoa or even brown rice.

thats whats up SQWIB!!! love me beef barley soup..that was actually one of the only MRE's i would look for out in the field. of course yours looks way better than what i had ina bag...haha. i make Beef barley soup here at the house but i have to add shrooms! thanks for sharing!

I have never had beef and barley soup before but after seeing your pictures you can bet ill be making soon. Your picture of the finished soup looks like a professional advertisement. WAY TO GO!!!
