I'm new to the whole world of smoking meat. My first attempts were all with just wood as fuel. Too much smoke!!! Do I need to "pre-burn) the wood and cook with the embers or should I go to charcoal? Can I use briquets?
Hello smoker world. I just scored a big heavy duty compressor tank. Stored indoors. Really old, heavy steel. Plan to make a new reverse flow. Wilson49.
I'm smokin' shoulder and beans. I've got a wood stove to prep my embers. Seems to be working. Much finer smoke coming out of wilson. I'll be at it till well after ten. Thanks again folks for the input on fuel.Remember to post pics of the build. What style are you going to build?
