I'm new to the whole world of smoking meat. My first attempts were all with just wood as fuel. Too much smoke!!! Do I need to "pre-burn) the wood and cook with the embers or should I go to charcoal? Can I use briquets?

I built a barrel type reverse flow. I plan to build a charcoal hopper for the fire box. Going to try the charcoal.

i recently upgraded from a WSM vertical smoker to a reverse flow trailer so i'm learing as well, ive actually only done one smoke on my new RF rig...my plan it to mix wood and coal....coal to maintain the heat and wood for the smoke.

you might also be getting alot of smoke if the wood is not properly dried/aged. if you have fresh green wood you'll get alot of smoke as the water "boils" out of the wood. so make sure you leave your wood in the sun to dry out

Wilson, welcome to the Family. Here's some help for you...

If you have trouble with this... Pre-burn your wood(even green Wood) to Embers, you can get a steadier heat and the smoke will look like this:

or lighter ; if you smellthe Smoke it's working for you and with this Thin Blue Smoke , you;ll get a Milder taste. Just sayin;.

Hello smoker world. I just scored a big heavy duty compressor tank. Stored indoors. Really old, heavy steel. Plan to make a new reverse  flow.  Wilson49.

I'm smokin' shoulder and beans. I've got a wood stove to prep my embers. Seems to be working. Much finer smoke coming out of wilson. I'll be at it till well after ten. Thanks again folks for the input on fuel.
