Greetings all. I am new to the smoke scene but have been cooking for a long time. I cooked professionally for ~ 10 years but have moved on to other things. I suppose my largest motivator was that it had become routine and I don't handle routine very well. Even the inherent chaos of the business became tedious and that threw up a red flag that I needed change. I am still in a transitional period but its nice to be happy about going to work again.

Anyway back to the Qin. I love food and barbecue has really found a special place in my heart. My wife recently bought me a CharGriller side box smoker for my birthday and its been a blast. Thus far I've done spare ribs and a pork butt. I'm looking at doing a couple whole chickens tonight or tomorrow, one standard bbq style and the other with a Jamaican jerk rub. You guys have a great community here and I am happy to jump aboard.
