Hello all,
I've been lurking around for a week or two as prep for my first ever smoke which happened yesterday (more on that as I get the lay of the land better).
I've been grilling happily on a Weber propane grill for over 10 years, and in fact I haven't touched a charcoal grill in over 20 years. Back then it was burgers, dogs, and the occasional veggie burger that ended up as a street hockey puck more often than not.
A friend down the block was upgrading to a Weber Smokey Mountain 22.5" so I bought his 18" WSM, which is only a year or two old and decided it was time to try my hand at smoking. I keep kosher so the cooking will be beef, chicken and fish (sorry, pig fans.) My two big goals are to learn to get much better than I am with temperature control, and to learn some patience.
Yesterday's smoking experience was fun but nerve racking, and the results were mixed. I'm happy to report back in detail with pictures, I promise! I'm a decent amateur photographer so I wouldn't dream of sharing the story without the visuals.
Anyway, thanks for the help the group has already been, and I hope to learn more over time.
