Pork Butt in MES Analog Question

Hello all:

I'm new to smoking and new to the forums.  I have read many of the threads and found them enjoyable and informative.  I'll be doing my first smoke this weekend and have a question.  I purchased a 9lb pork butt (ask for the smallest they had).  Anyway, I am hoping to have the pulled pork ready for 6-7pm on saturday night.

By my calculations, this pork butt should take 13.5-18 hours to smoke.  So my question is, should I put it on a 5am, or should I put on around midnight-1am?  I am worried about putting it on at midnight and falling asleep.  And, if I put it on a midnight, should I just fill the chip tray and hope it lasts until the morning?

Lastly, I  bought spicy brown mustard instead of yellow mustard (by mistake) to coat the butt before apply the rub.  Should I get regular yellow or will the spicy brown work?

I usually do an average of about 2 hours a pound time wise...and don't use mustard at all.  BUT....each piece of meat has a mind of it's own.  The IT (internal temperature) is more important than the time it takes.  Some folks smoke until the IT gets to 165* and then foil the butt and put it back in the smoker and cook until the IT is about 200*.  Some folks foil and others dont.  It just depends one if you want a nice bark or not.  Foiling can help you push thru a stall...where the butt sits at a certain temp for a long time.

Not familiar with your smoker...but some others will come along and give their 2 cents in a bit.  Show the Q-Views (pictures)!
