I'm not new to cooking or BBQ'ing, but new to smoking. Last year I purchased a large Big Green Egg and am loving it. Currently smoking up a mess of ribs on it. Hoping this time they will be perfect....last time tender, delicious but a bit dry...this time big water pan in the egg and mopped a couple of times.
Tried a brisket...despite running out of charcoal....thick part was good...thinner part - jerky...plus the rub wasn't right...hope to master some day.
