pork picnic

Hello all, i am smoking my first pork shoulder this weekend(just the lower shoulder or picnic) and i am lookin for all the advice i can get. This will be second time ive used my smoker. I used hickory for my first smoke for spare ribs but have had few people tell me apple chips would be great for the shoulder. Thoughts?

Chips have to be replaced more often. If I am not using an AMNPS, I like chunks, particularly fruit wood. At a temp of 225-250*F expect 2 hours per pound. At 250-275*F, 1.5 hrs/lb. Add a 2 hour worth of CYA/Rest time. Foil wrap with towels and in a Cooler up to 5 hours if you get done early...JJ

Yep, Apple is very good with Butt. The next time you do Spares , however , try Cherry.

 

And as JJ said, chunks are better.

All good advice.  I agree spares go very good with cherry and chunks are great to use.  I like hickory as well but always feel free to try some new things.
