Hello all, i am smoking my first pork shoulder this weekend(just the lower shoulder or picnic) and i am lookin for all the advice i can get. This will be second time ive used my smoker. I used hickory for my first smoke for spare ribs but have had few people tell me apple chips would be great for the shoulder. Thoughts?
 
Chips have to be replaced more often. If I am not using an AMNPS, I like chunks, particularly fruit wood. At a temp of 225-250*F expect 2 hours per pound. At 250-275*F, 1.5 hrs/lb. Add a 2 hour worth of CYA/Rest time. Foil wrap with towels and in a Cooler up to 5 hours if you get done early...JJ
