Finally finished my BBQ/Oven/Smoker contraption!

I designed myself it as a multi purpose BBQ / smoker / wood fired oven. I did some of the work myself (brickies labourer) and had a local blacksmith make up the doors and stainless fabricator make up the plates and grills.

You can change how it works by swapping over the rear grill to hot plate and using the chimney vent. There are two chimneys running one behind the other with a stainless plate separating them.

BBQ/Grill mode uses grill instead of plate at back. Can also use as ‘direct’ hot smoker for chicken on rotisserie in the oven.

‘Indirect’ smoker mode is hot plate in back and flap open to direct the smoke into the oven chamber.

Oven mode is hot plate in back and flap closed to make the smoke run out the back chimney.

Ill also be able to use the front of the firebox to cook bread / pizza on the hot firebricks and have a gas burner on the left.

This is of course all theory until I use it a few times! First fire up had it sitting on 235f perfectly! I have never smoked anything before so it's the start of a long journey!




 
Will you get hot while tending the cooking chamber?  It looks like you'll be leaning right over the firebox?   I love the innovation and craftsmanship!    Too bad access to the cooking chamber isn't from the side?
 
As it's drawing air from front to back to front should stay cool. (That was the theory in the design)

 

First test with smoker at 235f and only a small wood fire at the back of the firebox meant there was no issues with heat at the front. I am thinking of getting marble/soapstone slabs to place on top of the hot plates to retain/control the heat if I need to. I can also line the inside of the firebox door with insulation if required.

 

The only issue I had was a hairline crack appearing around the chimney as the heat it was drawing meant it was way hotter than the front. I also should have done a few smaller fires prior to cranking it up! (bit too keen) Ill line the chimney with firebricks or stainless plate set 1cm off the bricks to protect it from the direct heat.

Would also be interested to know how it has been working out for you.

I have a current combined brick BBQ/Oven that I've built myself, but intend to modify it to look more like yours do.
