So I've been in the mood for a good BBQ chicken sandwich so here is what i came up with.
I love to use chicken thighs they always remain moist!!!
I just made a spice rub and left them to marinade for a few hours.
Then its off to the smoker. I smoked them for 1 hour and 45 min using apple wood chips and natural lump charcoal.
I kept my grill/smoker at 325 degrees since i like crispy skin. Man it looked so good it was almost a shame to pull it apart for sandwiches. But like i said i was in the mood for a good sandwich!!
All pulled apart. those little burnt ends have some killer flavor!!
Here it is all slathered in my homemade chipolte BBQ sauce. I like my BBQ with a kick.
Finally here is my sandwich!! with some creamy slaw YUM

I had a cold homebrew to wash it all down!! damn it was good.
