I feel my dues are now paid. Selling my modded ECB and getting an 18.5" WSM. I'd keep it for nostalgic purposes, but a friend really wants it and it'll have a good home...plus I could use the room.

On to the cook!

Friday night, I injected and rubbed a +/- 4# chuck following Jeff's recipe exactly. http://www.smoking-meat.com/january-2011-smoking-a-chuck-roast

Wrapped it in plastic, then chilled till the morning.

Saturday morning, woke up around 9, took the meat out to the counter, then went out to build my fire.


I didn't have any Mesquite chunks, so I used chips and Hickory chunks. Should be fine. I know I've been told to use briquettes, but I wanted to finish off this bag of lump. Stupid, I know.


At 11am, temps still not where I want them (around 270* but dropping), I couldn't wait anymore and put the meat on. 

Chased temps all day, night and into the next early morning, not fun, but not horrible. Finally exhausting that bag of lump and breaking open a bag of KB. Man, after using lump exclusively for so long, I'd forgotten the strong petroleum processing smell of the Kingsford. All good though.

I never opened the lid once during the cook, so no pics for the whole thing except this one...which is magnificent!

Good thing I also had a tri-tip thawed to put on my gasser, because without that we wouldn't have eaten Saturday night.

1 AM Sunday morning: Maverick alarm finally beeping telling me 195* has been achieved. At least I was awake enough to grab some pics.


Foiled and into the cooler with towels. I don't care how long it's in there...I'm going back to sleep.

11 AM Sunday: Roll on out to the kitchen, removed the foiled chuck from the cooler and checked the temp. 105*

Fine, into a 200* oven for an hour then the unwrapping.


12 PM: Time to slice and serve with some eggs and toast. Turned out super smoky, tender and juicy. Best Breakfast ever!!

Ya, I'm gonna miss the old fella, but I'm really excited about getting my mini. :)

Just finished off the last of the chuck for lunch with the guys at work.

I think it tastes better when your nasal cavities haven't been inundated with the smoke for hours on end. ;)
 
I've been using Kingsford in my Stok when grilling. The bag says Competition 100% All Natural. I get it at Costco and have yet to see the same thing anywhere else like Homers or the markets. I see you're in the Ventura area...gotta be a Costco near you...wonder if they stock it there. 2 big bags together ala Costco. I get another one to carry me through winter b4 they run totally out and have enuf till the next Spring. Good burn, no stank and nothing but ash left.

I wish they stocked it here, but they don't! Lowes has had the KF blue (2) 20# for $19, plus a free scripto lighter, so I have been stocking up on that for the mini. Still looking for a good source of lump.
 
The big question is, when's the Grand debut of the new shiny smoker???

That's the stuff to get I hear. And yes, there is a Costco close and I'm a member. Must go check ASAP.

That's a decent price for the blue. If my local Costco fails me then Sam's has 2x20# of KB for $17.98 thru March 30th. I bought my lump online. Ozark Oak. Don't remember what I paid but I'm sure it was too much. 2 bags lasted me through all the ECB smokes I've posted here plus 1 or 2 tri-tips I didn't bother posting. If you have a BevMo up there, mine carries Lazzari mesquite or (mixed I'm guessing) hardwood lump. Can't recommend as I've never tried them. http://www.lazzari.com/food-main.html
Selling??!!  I couldn't even give my 35+ year old one away. Sad to see it hauled away.
Well, my friend who owns a stainless shop did all the modifications for free (even the thermos), and did a stellar job. Plus I'm also including a cover and a really good condition Charcoal Gourmet that's just missing a few nuts and bolts, the lame ass thermo in the lid and a grate. All for $50. If he frankensteins the 2 and does a few of the mods seen here  to the Gourmet, he could end up with a very nice unit.
