Found this brine online somewhere and have used it a couple times now and its been a big hit so, I thought I'd share with you kids.

8 cups water

3/4 cup kosher salt

3/4 cup brown sugar

3/4 cup white vinegar

1 Tbs. of your favorite rub

I heat everything on stove to dissolve, let cool, and brine chicken for 4 to 5 hrs. I've done quarters and bone in breasts and they came out great both times. After I take chicken out of brine and rinse I coated with my favorite rub. The End.

Just bought a Meadow Creek TS 250 with a BBQ 42 chicken cooker on the trailer down your way. P/U on the 6th of next month. Can't wait to use the chicken cooker. I was going to buy a Lang 84 but this deal I couldn't pass on.
 
My first Whole Hog was on one of their Roasters. Really nice piece of equipment. The prices seem competitive with Lang and they are conveniently located to us PA boys for pickup...Good luck with it and post a review...JJ
