Hi All

Just got back into smokin, was away for 2yrs since I got tired of feeding and blowin out charcoal smokers. They only last 2 to 3 yrs outside here in Oak Brook IL. and feeding them coals just screws up the heat an the process.

So I just bought a Masterbuilt Digital Electric Smoker, its lightwieght I can carry it inside when done, insulated so it smokes constant temp even in the coldest of weather here and best of all I got lucky and mine maintains the temp I set within 1 to 2 degrees of what I set it.

But being a crazy old retired man I just had to have all the toys to go with it so I bought a meat grinder/sausage maker and a meat slicer and a vacuum sealer and a digital temp probe.

The wife thinks I am havin a midlife, but for the past 2 weeks I have been havin fun and eating just awesome and now she is hooked. From smoked potatoes, brisket, ham, gator, bison, venison, fish and prime rib my freezer is packed while having great meals. 

The reason I am here is that I never made any kind of smoked sausage, so I have a ton a of questions So bear with me because I can and will help with any other smoking  questions while seeking answers I need to know.

Awesome Thx, I know how to smoke meats and fish that I have done for over 35yrs.

But shame on me I never made sausage let alone smoked it
