Hey everyone, I have been smoking for about a year now. I have a propane smoker. I Graduated from culinary school and started a food truck with my wife. Shes the pastry chef, she makes the rolls for my sandwiches and desserts. I have been smoking Brisket, Pork Butts, and Chicken. Making Sandwiches using Brioche rolls. They have been a success. Once a week I smoke 4 racks of St. Louis ribs as a request from my customers. Its been Fun. We are located in Colorado.
