Hi Kevin,

And welcome1.gif to the SMF, the best BBQ site on the web.  Whatever you need to know about the fine art of BBQ you can find it right here, from recipes to technical knowledge.

One thing you need to know about us is that we like to see pictures of your creations and your gear.  We call it Q-View and its basically the Rules.gif!!!

So, don't just talk about your food, show it!  Otherwise you may get a gentle reminder, like this...

Good Luck and Get Smokin'

Well alright then!!!  Tell us what type smoker you have or what type you want to own.

Also, please take a minute to update your profile with your location, this will help us to better understand your situation (weather patterns, humidity, etc.) when offering advice.

Thanks,

Bill

What type of offset smoker?  Brand name?  Is it a reverse flow or does the firebox dump right into the smoke chamber?

I also have an offset smoker...a CharGriller Pro that needed a lot of modifications to make it work well.  Since then I have acquired a WSM (Weber Smoky Mountain cooker) and a Masterbuilt Electric Smokehouse (MES).  My favorite is the WSM.

Unless you own a really high-end offset, you will need to make some mods, but the good news is that the good people on this forum will be glad to help!

UDS smokers are awesome, but are typically built by the users, though I suppose you could probably find one on Craig's List.

Good Luck,

Bill
