Got butts on sale at piggly wiggly for 1.19 per lb.. great deal! Was worried they were small but the bones were small too so I didnt lose a lot of weight in bones

Out of 35lbs of butts I had 1.5 lbs of bones... pretty good


Ready to do some grinding. I have to do a triple grind for the hot dogs and a course grind for the kabanos and breakfast sausage

I am test running Todds tube smokers and they are awesome...... The weather is cold, rainy and windy and I thought these things would go out with the rain doing down my smoke stack and the moisture but these tune smokers are chuggin along

The weather is awful right now... Its cold, rainy and windy..The 4 hr cold smoke went off without a hitch but. I may have to bring this batch in and par boil.. we'll see.. going to give it a shot on the smoker... will update soon on my progress

I have a 12"....haven't used it yet. (Hanging head in shame) :biggrin: Y'all are just trying to make me get into doing sausages! Dang it! :30:

They look great! Tube smokers are on my list. I haven't tried pellets yet, just dust.
 
Well the Weather was so crappy last night with the cold, wind,rain,and the mud I decided to let the meat hang in the smoker over night. Its 4 am and 34 degrees out and everything outside has Iced up. I'll reload my tube smokers and fire up the smoker at daybreak......

Its morning. I reloaded the tube smokers. They burned perfectly. There was nothing left but ash. I fired up the smoker so it will about 4-6 hrs

Crappy,rainy cold,windy muddy night



here is the 2 to 4 inches of snow they were predicting


smoker is fired up. I did the right thing waiting till morning. All I have to deal with is the mud

Now that is a smoker full of sausage!  I have been thinking about hot dogs since Shoneyboy's thread. After seeing these pictures, I need to go to Sam's club and buy some meat.
 
Hot dogs are out... Everything is looking good with a nice color from the tube smokers

This is a rare occasion I twisted the sausages, I usually take the time ad tie because I like everything uniform. Twisting saves on time though.......

Needed to hang the kabanos and remembered I had this pot.. Thought it would work great but when I got it to the fridge I couldnt close the door. so the Kab will lay dry
