My name is Peter and I currently live in the Chicago land area (my wife and I have spent several years in Dallas and feel as it that is truly home). I came across this forum via Google images, looking for a professional image of my smoker to use as a background. While looking for Brinkman Trail Master Limited Editions I came across some images that left me dumbstruck. Folks on SMF had posted pics of mods to their Trail Masters. They are cheap and easy mods that address issues I had noticed with my Trail Master. Anything I had been coming up with was too expensive and complicated. Needless to say, yet I say it, I will be over to those forums next to express my thanks.
I have only been smoking for 1 season, but due to a late start I only have two bouts under my belt (ribs and pulled pork). However, due to the opportunity to observe masters at work, I have been pleased with my results. In Chicago Hickory is king, and in Dallas its Mesquite, but I have fallen in love with Apple wood.
I look forward to what I can learn on this site.
