Left over smoked ham

I had a bit of left over smoked ham from the Holidays.  Didn't want it to go to waste...didn't know what I wanted to cook for dinner one nite.  So this is what I made.  It's great!  Had some good veggies in it too...for the waist line.  Can give the recipe if anyone is interested.  IF you don't like Brussels Sprouts...I am sure you could use broccoli.

 
Looks good, Kathryn. I have a fair amount of left over double smoked country ham from the Holidays. Used some yesterday in a big pot of gumbo along with chicken, andouille, and chourico.
 
This one was really easy...and so quick!  I haven't really "roasted" the hard veggies before...this was great.  It made a huge batch and was gone quickly!

Baking dish

4-6 TBS of melted butter

about 2 pounds of fresh Brussel Sprouts (washed and halved)

1 head of Cauliflower (washed and broken into smaller pieces)

about 2 pounds (or more) of cubed ham

2 TBS of granulated garlic

Salt and Pepper to taste (I used less salt do to the ham having a more salty taste)

Throw all of it in the greased baking dish..mix together to coat with the butter and seasonings.  Bake at 350 for about 30 minutes.

I love pungent brussel sprouts, but I don't like cauliflower. ;p

I was looking at southernplate.com yesterday, to see if Mrs Jordan had a potato soup recipe. She does, and it looks awesome, and she uses smoked pork in it. Wish I had some left over smoked ham...

BTW, I've tried a couple of her recipes since you introduced us, this lady is a good cook. Simple, easy, no fail recipes that taste great. Thanks!

Some folks dont like them but like cauliflower.  I guess if you only want B/sprouts...just use them.  It was just too easy on a "I don't wanna cook" nite.

Christy is great!  Her chicken stew is wonderful too.  I add some carrots in it for color and more taste.
 
That looks great - thinking about a ham maybe this weekend since we did not have any on the holidays.
I usually make Red Beans and Rice with a left over ham....did that...and still had more "reruns" of the ham.  Love pork!
