I've been smoking for a few years now, Mostly briskets and ribs but I'm branching out and attempting turkey for the first time today. With 4 pecan trees in my yard that randomly drop very large branches every couple of years, I have an endless supply o pecan wood. I have trouble giving some of it away!

My first attempt at ribs was on a tiny webber grill that was barely big enough for the slab of ribs. I used charcoal and cooked directly over the flame and had no idea how to control the flame. When I went out to check on them, the flames were towering about 3 feet above the grill. The guy installing dish network was looking at me like the idiot i was. Since then have made a lot of progress but still have a long way to go.

I'm starting to branch out into different woods (I aquired some mesquite and walnut recently, looking for some apple) and experiment with rubs. I currently have a store bought barrel with side fire box but I would love to build a brick smoker.
