Well, title says a lot ! 

I'm Vincent and I'm totally new to this smoking business and I live in the Montreal area.

Now, let's put the pride aside and here's my story: 

Well, my wife asked me to build her a smoker and being the good husband that I am, I settled upon the task. She had already bought a proofer to build this smoker without doing much research but from what I could read so far, sound like a good base to start with.

I'll do some more reading here and once the build project really starts, i'll get some pics up for sure ! 

I have to say this site is an awesome source of info !!!

So from my bakery days I'm assuming that a proofer is a metal cabinet that you let bread rise in....is that right? Does it have a heating element in it or are you going to attach a firebox?
