Howdy folks! I am a transplanted Texan, living in Illinois, and tired of the lack of good Barbecue. I came to this forum to look for help with my recently acquired MES smoker, since apparently my favorite charcoal smoker is no longer in production. I look forward to lots of fun interaction with fellow "charred flesh" enthusiasts. Any help or suggestions would be greatly appreciated, and I will certainly offer help to others any time that I am able.
