smoked cheesy meatloaf

got the idea from coworkers.  so I gotta give them credit

basically it it meatloaf (2 lbs beef and 1 lb venison) pushed flat ontop of wax paper then I dumped sharp cheddar cheese on top of it and rolled it up.  I put a layer of ham in there to keep the cheese from being absorbed into the loaf.



still cooking.  I'll post a finished pic when done.  gosh I'm hungry!  smoking with apple wood

what I put in my loaf

3 pounds hamburger

1/2 onion

half a package of crackers

6 eggs

garlic, pepper and ketchup to taste

I forgot to add the mushrooms
 
I like the idea of the ham to keep the cheese from disappearing. Can't wait to see how that works out. Also apparently im an idiot because I never thought of wrapping my water pan in foil. Can't believe how dumb I am sometimes.

honestly, I got the idea here.  we are all here to learn from each other.

Definitely. By the way if you haven't checked out the fatty sticky you should. Great info on putting the meat in a zipper bag and rolling it with a rolling pin. Also great stuff on bacon lattice if you like bacon wrapped things....

Somehow I missed the ham thing though. Sounds like a good solution!

It turned out really well.

Did yours taste overly hammy? I wonder though if I sliced some beef really thin before I ground my meat for my meatloaf if it would work the same way...if not I might try a bacon layer to keep the cheese in.
