I wanted to say hi to everyone here on SMF. I live in Mount Washington, KY just outside of Louisville, KY and love to use my smoker and cook outdoors. A couple of years ago I recieved a Brinkman electric smoker and have really enjoyed it so far. This past summer I went to a BBQ class taught by one of the greats in Chris Marks of the Three Little Pigs BBQ team. Since I attended Chris's class my skills have gone up to a whole new level and I love to use my smoker even more now than before. I would love to have a good charcoal smoker like The Good One but right now use what I have and try to keep it as cheap as possible. I had started to have issues with my electric smoker, it started to seem like it was taking a lot longer than it should to cook some things so I installed a thermometer in the lid and found out that my smoker was only getting up to a max temp of about 185 degrees. As you all know that is no good when you are smoking something, you have to have control of the heat so I went out and bought a fish fryer and converted my electric smoker into a propane smoker and love it. I have complete control over the heat, I can have it under 200 degrees and can have it all the way up well over 300 degrees in no time at all. My first run on the new and improved converted propane smoker I made was for Thanksgiving this year when I smoked two turkey breasts and one whole turkey, I had the temp at about 325 degrees and it turned out great and the skin was nice and crispy. I hope to continue learning and find new ways to cook things in my smoker and look forward to interacting more with all of you.
