Hello all,

I have some neighbors who have been sharing their amazing creations from their smoker with me throughout this past college football season. Whether through the kindness of their hearts or because they got tired of me lusting over their food every Saturday (hopefully the first option, these are incredibly nice people), they actually purchased a 30" Masterbuilt electric smoker for me as an early Christmas present, which I have been having a great time experimenting with. This is the analog model #20070210. So far I am about 2 out of 3 for superior results after following some misguided Internet advice on smoking brats. Dried the heck out of those because I think I left them in for too long without checking on them.

In any case, I only recently became aware of the fact that electric smokers even exist. I am a charcoal grill purist, so never would have purchased one of these things on my own - but I have been so impressed.

I live in the Shenandoah Valley in SW Virginia if that helps to assess the climate I live in, and would like to say thanks in advance for any advice you have to offer.
