This is a small boneless PR my wife picked up.

In the WSM with a chunk of hickory.

Rub is just salt, pepper, garlic and a pinch of thyme and 1/4 cup red wine.

IT was 145 when pulled. She likes PR rare so she got it.

My wife sliced it while i was uptown.

Guess it is med rare but she will eat it. (she even took the pics)  YIKES
