Steamed then Cold Smoked Deviled Eggs

Here's a few I just did up. I start a large pot (steamer fits it) of about 1/3 -1/2 full of water to boiling. Once boiling I add the steamer with the raw eggs, cover, turn down to simmer and let go for approximately 17 minutes. Turn the heat off and leave sit for about 10 minutes, then run cold water over them. Peel, dry off on paper towels and cold smoke (outside temps below 38*) for a couple hours. 

For these I used Jack Daniels Bourbon Oak Barrel Chips. I have had no problems peeling newly bought eggs when I steam them. Cold smoking them after cooked and peeled gives them some color too!

I have 2 of these to put the eggs on in the smoker (they were made by a friend and supposed to be for jalapenos but didn't work for them).



And Deviled but haven't sprinkled the Paprika on yet!

Looks Great Alesia. Great Color. We make unsmoked deviled eggs all the time and add jalapenos to our yoke filling. This will be a nice new twist. Thanks for the idea.

And to take it one step further, smoke the jalapenos a la ABT style before mixing it into your yoke filling.  That would be killer.
 
Thanks all! BF won't eat deviled eggs now unless they are smoked and smoked jalapenos would be good - I do add a few shakes of hot sauce to the filling. 

No that's not a pie LilRicky - I was smoking sea salt too!

Excellent. Any recipe that requires you to double smoke the ingredients is tops in my book. Kinda like using smoked cheddar cheese in a mac & cheese recipe that you plan on smoking! BWAH HAHAHAHAHA
